Uhhh like size, hp, weapons, the weird teleporty tentacle thing from BG3. Maps would be neat too.
For instance, I know MToF details githyanki ships, but doesn’t explain damage-based things.
I wanna do an airship battle… So like, AC, hp, damage threshold, etc?
Those things already exist in the Dungeon Master's Guide and Ghosts of Saltmarsh, and the cuttlefish in Mad Mage has them as well.
Those aren't unique to weird ships, the weird ships are a matter of description. 1/2

Weapons are covered as well (siege weapons in DMG, and Ghosts).
The weird stuff is the function of a helm. There is one example of a fully-statted 5e spelljamming helm in Mad Mage. That covers your weird movement, gravity and air in space, etc. 2/of more, I lied The vast majority of what you're looking for is the aesthetic presentation and description. Take the art of githyanki ships and their description in ToF, description of nautiloids (discussed at least a bit in Volo's), and lay them over existing ship stat blocks, and they're good

Reskinning gets you really far. Want weird mind flayer weapons? Check out the infernal war machine weapons from Descent into Avernus if you don’t want to just use a ballista. Check out the Infernal Screamer, reskin as a freaky bio-engineered wtf, and you’ve got a great psi-cannon And don't misunderstand, I get that it's not the same as having a fully fledged source or setting book for it. I'm just saying the pieces are there right now to build some amazing spelljammery goodness.

Thanks for your insight! The helm item from DotMM answered a lot of my questions. The speed thing was another thing I was wondering about.
I also googled and found (what I think is) an official deck plan for a nautiloid. Looks like the old spelljammer ship card!

Incidentally, I noticed that the helm in DotMM doesn’t have a mechanic for reaching spelljamming speed. What would be a suitable way to implement that? Spelljamming speed was a standard value, no (100M miles/day)? Straight port should work fine.
