quick rules question. Given Jeremy’s tweet forever ago, is there ever a way to make an unarmed attack interact with two weapon fighting (specifically, say I took dual wielder and wanted to double punch people)? Nope. Two weapon fighting requires weapons with the light property.
Along those lines, monk's Martial Arts feature sidesteps two weapon fighting while paralleling those rules. As written there's no way to get the Dual Wielder feat to interact with your unarmed strikes.

Now, as a DM, I'd be open to having that conversation with a player, particularly one who isn't a monk (since monks have their own rules for both bonus action unarmed strikes AND bonus AC).
