I’m failing to see the purpose behind Bullying shot? It just seems like Deadeye with also a chance to fail an Intimidation check and therefore not gain the advantage? Is it supposed to also Frighten the creature as well? Or maybe I'm reading it wrong but the wording makes it seem as though the Intimidation check is used to gain advantage on the attack roll. But either way it doesn't stipulate the benefit of the Intimidation check

It has nothing to do with an attack, it just allows you to spend a Grit point to get advantage on an intimidation check. Essentially firing your gun in the air/near the creature to spook it.
