With 5th edition D&D removing the concept of NPC classes (Warrior, Noble, etc.), how does that change the chef character who was the highest-level character on the planet? 5E removed the concept of NPC classes because it essentially removed the concept of NPCs having classes at all; NPCs simply have the skills you want them to have. So Maza Thadian is still a legendary chef; I might give her expertise with cook's tools and a +5 proficiency bonus.
