1/2 I don’t like the usual mechanics for when an NPC attempts to lie/deceive. It set up a skill contest that pits a characters insight check vs the NPC’s deception skill. The reason is that no matter how the dice rolls work out, the player knows whats up. 2/2 I prefer have to have the NPC say whatever they are going to say and if the character wants to make an insight check, they do so against a set DC instead. No hands are tipped that way. So, how much of a dick am I being by designing such encounters this way?

Works just fine. If you’re writing for D&D, I’d say use the passive Deception score of the liar. I use my PCs' passive Insight for this, making a Charisma (Deception) check for lies against those without saying anything.

Lich is a good answer, but I think undead that you aren't entirely sure what they are are quite scary! So I'd say undead creatures we don't usually think of being undead, like beholder zombies or rotting tarrasques.

A wyvern should be smoked, so in a smokehouse let it be hung
By its tail, and at the other end, by its tongue
But I know of no smokehouse big enough to smoke a dragon
So build two lines of bonfires, and drag your wyrm between, on a wagon I can't imagine the amount of seasoning you would need.
Maybe do the smoking close to a salt mine?

A wagon full of half-salt, half-pepper would do. Covered by boughs of mixed herbs to keep it from blowing away. ;} Sounds good.🙂

Good luck catching one, first!Wait until your ravening wyrm is asleep. Then trick a wizard into working a "move yon mountain" spell to prove their might. To drop atop the dragon, then put back to tidy up.
Often, squashed dragon gets moved, too, for easier collection.

Haahhaahahaha Gotta try that! If it’s a volcano, then all you need is gather a lot of friends and make sure the dwarves bring the ale. Reeling at imagining drunken dwarves dancing and singing not "It's Raining Men!" but "Burning Mountain Doth Erupt…And It's Raining Dragon!"

This is a good plan…but my dear friends remember to make sure you, brought down the dragon’s mate while you’re at it otherwise…while you’re smoking your fine dragon, you, my friend will become a cautionary tale when the mate makes you char-broiled humanoid! Wise advice, to be sure.
Personally, I prefer 'brute' dragon meat (fire lizard), not sentient, and both smoked AND pickled…but pickling a whole carcass is a LOT of work. So I settle for roast boar, or smoked deli meat.
I prefer local adventures, these days.
