OK, serious question, though: When you talk about the "giant pile of hit points" problem, do you find that one of the solutions to that is to obtain your desired CR by trading off a lower DCR for a higher OCR?

Yep. Make the monster quicker to face overall by lowering its hp and increasing the effective damage output to make for a more exciting fight.
The slog of fighting just a brick can have its place, but I find it has to be done in concert with something else to be interesting.
