Anyone who thinks high level D&D characters can’t die, probably hasn’t tried very hard. They are still vulnerable if you hit them hard enough. What is true is that it is more difficult for a published adventure designer to judge how a group they don’t know will fare.

One group might be immune to poison, another have incredibly high ACs, another counter ever spell used against them. I think that it is important to send a range of threats against high level parties. Some they’ll handle easily. Others they won’t.

It should be noted that adding additional party members has significant effects on balance.
Imagine a party of Fighter, Cleric, Wizard, and Rogue at 18th level. Formidable, huh?
Now add another 18th level Cleric or Wizard to the group. That's another ball game.
