For me, my first character was a cleric of Pelor and I will always remember how he died summoning a little bit of the sun to take down a vampire coven.

I always liked sun gods, so Pelor is up there. My favorites right now are the gods as I tinkered with them in the my Nentir Vale setting. I made the gods the leaders of various empires, who ascended to defeat the primordials. So like Erathis was an empress, Asmodeus was the king of a tiefling realm, and so on.
