What I've suggested before is that the Gith are the survivors of a previous world destroyed by the Daelkyr, and that the mind flayers are to the Gith as dolgaunts are to goblins: a reflection of their own people twisted into the weapons used to destroy them.

And remember: most people in Eberron don't use PC classes. In 3.5 terms, a lawyer or politican would generally be an Expert, or possibly an Aristocrat. If I was making a PC lawyer or politican, bard seems like a logical choice.
